Black Bean & Rice Soup

  • 1/2 cup chopped celery
  • 1 med. onion, chopped
  • 1 Tbsp. oil
  • 3 (14 1/2 oz.) cans chicken broth
  • 2 (15 oz.) cans black beans, rinsed and drained
  • 1 pt. salsa
  • 1 1/2 cups chicken breast, cooked and cubed
  • 2 cups cooked rice
  • 1 Tbsp. lime or lemon juice
  • 1 tsp. cumin
  • salt and pepper to taste

Preparation:

Saute celery and onion in oil until tender. Add remaining ingredients and heat through.
