Mexican Chicken Quesadillas

  • 1/2 c. cream cheese
  • 1 Tbsp. fresh, chopped cilantro
  • 1 Tbsp. chopped green onion
  • 4 oz. can chilies
  • sea salt, to taste
  • 1/4 tsp. taco seasoning
  • 1/2 c. diced, cooked chicken breast
  • 1 c. shredded Pepper Jack cheese
  • sour cream for dipping
  • tortillas


Mix cream cheese, cilantro, onions, chilies, sea salt and taco seasoning. Spread on tortillas. Add a layer of chicken breast and cheese. Put another tortilla on top. Place in buttered skillet and brown on each side. A quick, easy lunch. Yield: 6 servings.
