Meat and Potato Quiche

  • 3 Tbsp. oil
  • 3 c. shredded raw potatoes
  • onion salt to taste
  • 1 c. shredded cheese
  • 3/4 c. cooked sausage, ham or bacon
  • 1 c. milk
  • 2 eggs
  • 1/2 tsp. salt
  • dash of pepper
  • parsley flakes

Preparation:

Combine oil, potatoes, and onion salt. Press into 9" pie plate. Bake at 400° for 15 minutes. Remove from oven and layer in cheese and meat. In a bowl, beat eggs, milk, salt, and pepper. Pour over meat and cheese mixture and sprinkle with parsley flakes. Return to oven and bake at 400° for 30 minutes.
