Marinated Tomatoes

  • 3 lg. fresh tomatoes, sliced thick
  • 1/3 c. olive oil
  • 1/4 c. red wine vinegar
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 clove garlic, minced
  • 2 Tbsp. chopped onions
  • 1/2 Tbsp. parsley
  • 1/2 Tbsp. basil
  • 1/2 Tbsp. oregano


Arrange tomatoes in a large shallow dish. Combine remaining ingredients in a jar. Cover tightly and shake well. Pour over tomato slices. Cover and refrigerate for several hours. This marinade is also great to use on peppers, extra you have a lot at the end of the summer.
