Carrot Bread

  • 1 1/2 sugar
  • 2 eggs
  • 1 c. cooked and mashed carrots
  • 1/2 c. vegetable oil
  • 1 2/3 c. flour
  • 1/2 t. salt
  • 1/2 t. cinnamon
  • 1 t. baking powder
  • 1/2 t. cloves
  • 1/2 c. raisins, optional
  • 1/2 c. chopped nuts, optional

Preparation:

Mix first 4 ingredients well. Then add the rest of ingredients. Mix. Pour into greased bread pans. Bake at 350° for 1 hour and 5 minutes or until toothpick inserted in center comes out clean.
