Caramel Apple Scones

  • 1/2 c. whole wheat flour
  • 1/2 c. all-purpose flour
  • 2 Tbsp. brown sugar
  • 1 1/2 tsp. baking powder
  • 1 tsp. cinnamon
  • 1/4 tsp. salt
  • 3 Tbsp. cold butter
  • 1/3 c. half-n-half
  • 1 egg yolk
  • 1 1/2 tsp. vanilla
  • 2/3 c. peeled, shredded apple
  • 1 Tbsp. caramel ice-cream topping

Preparation:

In a small bowl combine first 6 ingredients. Cut butter into mix until it resembles coarse crumbs. In a separate bowl whisk together cream, yolk, and vanilla; add to dry ingredients until just moistened. Stir in apple. Turn onto floured surface, knead several times. Pat into a 5" circle then cut into 4 wedges. Separate and place on an ungreased baking sheet. Bake at 400° for 10-12 minutes. Cool for several minutes, then drizzle with caramel topping. Yield: 4 servings.
