Broccoli Potato Soup

  • 1/4 c. butter
  • 1/3 c. chopped onions
  • 2 c. chopped broccoli
  • 2 c. water
  • 5 c. milk
  • 1 Tbsp. chicken soup base
  • 1/8 tsp. garlic powder
  • 2 Tbsp. cheddar cheese powder
  • 1/2 c. flour
  • 1 c. milk
  • 3-4 med. potatoes, cooked & cubed
  • salt, to taste
  • Velveeta cheese, opt.

Preparation:

Melt butter and add chopped onions and broccoli. Cover and simmer a few minutes until soft. Add water, 5 cups milk, chicken soup base and garlic powder. Heat slowly, don't boil. Whisk together cheddar cheese powder, flour and 1 cup milk until well blended. Add to soup, stirring with whisk the whole time until thickened. Add potatoes, salt and Velveeta cheese. Yield: 3 quarts.
