Black Bean Pumpkin Chili Soup

  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 pepper, diced
  • 2 Tbsp. olive oil
  • 3 c. chicken broth
  • 2 (15 oz.) cans black beans
  • 2 1/2 c. turkey or chicken, cooked and chopped
  • 1 (16 oz.) can pumpkin
  • 1 (14 oz.) can tomatoes, diced
  • 2 tsp. parsley
  • 2 tsp. chili powder
  • 1 1/2 tsp. oregano
  • 1 1/2 tsp. cumin
  • 1 1/2 tsp. salt

Preparation:

Saute first three ingredients in olive oil. Stir everything together in Crockpot. Cook on low for 4-5 hours. Serves 10 people. Note: Delicious served with cornbread or tortilla chips, cheese and sour cream.
