Barbeque Lasagna

  • Sauce:
  • 1 c. ketchup
  • 1 green pepper, chopped
  • 1 onion, chopped
  • 1/4 c. brown sugar
  • 1/4 c. lemon juice
  • 2 Tbsp. cider vinegar
  • 2 Tbsp. Worcestershire sauce
  • 1 Tbsp. mustard
  • 1 clove garlic, minced
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1/8 tsp. chili powder
  • 1/8 tsp. lemon pepper seasoning
    Ingredients:
  • 1 1/2 lb. ground beef, cooked
  • 6 lasagna noodles, cooked and drained
  • 2 c. mozzarella cheese
  • 1 c. sharp cheddar cheese
  • 1 c. Colby or mild cheddar cheese
  • 1 c. cottage cheese
  • 1 egg  

Preparation:

Combine all sauce ingredients in saucepan. Bring to a boil; simmer uncovered for 10 minutes. Spread 1/4 cup sauce in greased 9"x13" pan. Layer with 3 noodles and half of beef and half of sauce. Sprinkle with half of cheeses. Repeat layers. Combine cottage cheese and egg; spoon evenly over the top. Bake uncovered at 350° for 50-60 minutes or until lightly browned. Let stand 10 minutes before cutting.
