- 4 potatoes
- 1 Tbsp. salt
- 2-3 Tbsp. melted butter
- 2-3 Tbsp. chopped fresh parsley
- 4 Tbsp. grated cheddar cheese
- 1 1/2 Tbsp. Parmesan cheese
Peel potatoes or scrub if fresh. Cut into thin slices but not all the way through. Use handle of spoon to prevent knife from cutting all the way. Put potatoes in baking dish. Sprinkle with salt and drizzle with butter. Sprinkle with parsley. Bake potatoes at 425° for about 50 minutes. Remove from oven. Sprinkle with cheeses. Bake for another 10-15 minutes until lightly browned, cheeses are melted and potatoes are soft inside. Easy & Tasty. Good served with any meat or salad.
