Carrot Banana Bread

  • 1/2 c. butter or margarine
  • 1 c. brown sugar
  • 2 eggs
  • 1 c. mashed bananas (3)
  • 2 c. flour
  • 1 tsp. soda
  • 1/2 tsp. baking powder
  • 1/2 tsp. cinnamon
  • 1/2 tsp. salt
  • 1 c. grated carrots
  • 1/2 c. chopped nuts


In a large bowl, cream butter with sugar until light and fluffy. Beat in eggs. Mash bananas in small bowl. Mix flour, soda, baking powder, cinnamon and salt. Blend in flour mixture alternately with bananas. Combine with egg-butter-sugar mixture. Then stir in carrots and nuts. Turn into greased 9"x5"x3" loaf pan. Bake at 350° for 50 to 60 minutes or until cake tester inserted in center comes out clean. Cool 10 minutes, take out of pan and cool completely. Makes 1 pan or 3 small ones.
