Caramel Banana Muffins

  • 1/4 c. shortening
  • 1 c. sugar
  • 1 egg
  • 1 1/2 c. mashed ripe bananas, (about 3 large)
  • 1 tsp. vanilla
  • 1 1/2 c. flour
  • 1 tsp. baking soda
  • 1/4 tsp. salt
    Caramel Icing:
  • 2 Tbsp. butter
  • 1/4 c. brown sugar
  • 1 Tbsp. milk
  • 1/2 c. powdered sugar

Preparation:

Combine ingredients in order given. Fill paper-lined muffin cups 3/4 full. Bake at 350° for 15-20 minutes. For icing, melt butter in saucepan. Stir in brown sugar and milk; bring to a boil. Cool slightly. Whisk in powdered sugar. Place in small plastic bag, cut off corner, and drizzle over muffins. Yield: 1 dozen.
