2 Tbsp Olive Oil

2 Cups Real Bacon Bits

1 Cup Diced Onions

1 Cup Red or Green Peppers, sliced

1 lb. Sausage Links, sliced. Or Ham, diced

6 Eggs

4 Cups Frozen Hashbrowns, thawed

16 oz, MELTZ Cheesy, melted

1 1/2 Small Curd Cottage Cheese
-
1/2 tsp Sea Salt
-
1/2 tsp Black Pepper
-
1 tsp Garlic Powder
-
1 tsp Hot Sauce, optional

1 1/4 Cup Swiss Cheese, optional
Directions
In a large skillet with oil, sauté bacon, onions, peppers, and meat until tender. In large bowl, beat eggs, and add hashbrowns, melted cheese, cottage cheese, seasonings, and meat mixture.
Stir to combine.
Pour into greased 9x13 baking dish and bake uncovered at 350° F for 30-35 minutes.
Sprinkle Swiss Cheese on top and bake an additional 10 minutes or until middle is baked and cheese is melted.
