Pineapple Sunshine Salad


  • 3 cups - pineapple juice
  • 2 Tbsp - unflavored Knox gelatin
  • 1 (19 oz.) can - crushed pineapple, with juice
  • 3 - bananas, sliced
  • 2 cups - seedless grapes, cut in half
  • 6 Tbsp - honey

Preparation:

In a small saucepan, whisk gelatin into 1 1/2 cups of the pineapple juice. Let stand about five minutes while you mix the remaining juice, the crushed pineapple, bananas, and grapes in a large salad bowl. Heat the gelatin/pineapple juice to boiling while stirring constantly with wire whisk. Remove from heat and add the honey. Combine with the fruit in salad bowl. Stir well; cover and refrigerate until set. (This is a very flexible recipe. Experiment with other fruits like oranges and blueberries. Or substitute half the juice for orange juice. Healthy and yummy!)
