Peanut Butter Chocolate Chip Cookies


  • 3/4 cup - butter, softened
  • 1/2 cup - peanut butter (avoid peanut butter sweetened with powdered sugar)
  • 1 cup - granulated sugar
  • 1/2 cup - brown sugar
  • 1 tsp - baking powder
  • 1/2 tsp- baking soda
  • 3 - eggs
  • 1 tsp - vanilla
  • 1 1/4 cups - gluten-free flour mix
  • 1 tsp - xanthan gum
  • 2 cups - pure, uncontaminated rolled oats (available at Health-food stores)
  • 1 cup - chocolate chips

Preparation:

Cream together the butter and peanut butter. Add the sugars, baking powder, baking soda, eggs, and vanilla. Beat until combined, then add the remaining ingredients. Mix until combined. Drop by teaspoonfuls onto greased cookie sheets. Bake at 375° for 10-12 minutes. Its our very favorite cookie!
