Best Chocolate Cake

  • 1 cup - gluten-free flour mix (recipe below)
  • 1 cup - sugar
  • 1/2 tsp - baking soda
  • 1/2 tsp - salt
  • 1/4 tsp - baking powder
  • 1/2 tsp - xanthan gum
  • 1/2 cup - plus 2 Tbsp - water
  • 1/4 cup - plus 2 Tbsp - buttermilk (add 1 tsp. vinegar to regular milk to make buttermilk)
  • 1/4 cup - shortening
  • 2 - eggs
  • 1/2 tsp - vanilla
  • 1/3 cup - semisweet chocolate chips or 2 squares baking chocolate, melted in a double boiler and cooled

    Gluten-Free Flour Mix
    2 parts - brown rice flour
    1 part - tapioca starch

    Mix well and store in airtight container. Note: Use this mix for all the recipes that call for the gluten-free flour mix.

Preparation:

Beat all ingredients together in a large mixing bowl on low speed for 30 seconds, scraping bowl constantly. Beat on high speed for 3 minutes, scraping bowl occasionally. Pour into a greased and floured 8x8-inch glass pan. Bake at 350° for 30-35 minutes, until a toothpick comes out clean. A very basic chocolate cake that isn't too chocolaty.
