Twinkies

  • Cake:
  • 2 boxes yellow cake mix
  • 1 c. Crisco
  • 8 eggs
  • 2 c. water
  • 2 sm. boxes instant vanilla pudding mix
    Filling:
  • 6 Tbsp. flour
  • 2 c. milk
  • 1 c. butter
  • 1 c. Crisco
  • 2 c. powdered sugar
  • 2 tsp. vanilla

Preparation:

Cut Crisco into cake mix and pudding mix. Add eggs and water. Mix well. Spread approximately 2/3 of batter evenly into two 12"x17" cookie sheets lined with wax paper. Bake at 350° for 15-20 minutes. Cool. Filling: Cook flour and milk till thick. Cool. Add remaining ingredients. Beat till thick and creamy. Spread on one of the cakes. Place second cake on top. Cut in shape of store-bought Twinkies or squares. Wrap in squares of Saran Wap. Freezes well. Great for lunches. Yield: 30-33 twinkies. Note: Make cupcakes with any remaining batter.
