Strawberry Cream Cookies

  • 2 1/4 c. margarine
  • 1 1/2 c. brown sugar
  • 1 1/2 t. vanilla
  • 3 eggs
  • 1 c. coconut
  • 2 T. baking powder
  • 3/4 t. baking soda
  • 3/4 t. salt
  • 6 c. all-purpose flour
    Strawberry Filling:
  • 1 1/4 c. butter
  • 2 1/4 c. powdered sugar
  • 6 T. strawberry jam

Preparation:

Beat margarine, sugar and vanilla until creamy. Add eggs; beat well. Add dry ingredients and stir well. Roll into balls and flatten with fork. Bake at 350°. Strawberry Filling: Beat butter and sugar until creamy. Add jam and beat well. Spread half of cookie with filling and other half with strawberry jam. Make sandwich cookies.
