Strawberry Cake

  • 2 1/2 c. flour
  • 1 1/2 c. sugar
  • 2 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1-(3 oz.) pkg. strawberry gelatin
  • 3/4 c. vegetable oil
  • 4 eggs
  • 1 c. strawberries, mashed
  • 1 tsp. vanilla
    Frosting:
  • 1-(8 oz.) cream cheese
  • 3 1/2 c. (or more) powdered sugar
  • 1/2 c. butter

Preparation:

Mix dry ingredients. Beat eggs. Add oil, vanilla and strawberries. Add dry mixture. Pour batter in a greased 9x13 inch pan. Bake at 350° for 30-35 minutes. Frosting: Beat cream cheese. Add powdered sugar and butter. Beat in enough strawberries and juice to color the frosting pink. Frost cake when cool. Note: May bake cake in whatever pan desired.
