Skillet Baked Apples

  • 5 apples, peeled and halved
  • 2 1/2 Tbsp. butter or coconut oil
  • 2/3 c. brown sugar or sweetener of choice
    Topping:
  • 1/2 c. ground flax seed
  • 1/2 c. pecans, chopped 
  • 1/2 c. flaked coconut, unsweetened
  • whipped cream or Cool Whip

Preparation:

Melt butter in a large skillet. Add brown sugar. Spread the mixture in the skillet and place apples in, face down. Cover and simmer slowly until apples are soft. Mix topping ingredients and toast in a buttered pan in oven at 300° until lightly browned. Flip apples out onto plate. Top each apple with whipped cream and about 2 tablespoons of topping. These can be served individually. Serves 5.
