Peanut Butter Cupcakes

  • 1 pkg. brownie mix
  • 1/2 c. chocolate chips
  • 1/3 c. peanut butter
  • 4 Tbsp. cream cheese, softened
  • 1 egg
  • 1/4 c. sugar
  • powdered sugar

Preparation:

Make brownie mix according to directions, stir in chocolate chips. Filling: Beat peanut butter, cream cheese, egg and sugar until smooth. Put cupcake liners in pans and fill 1/3 full of batter. Drop filling by teaspoonful in center of each cupcake. Cover with remaining batter. (Or you can stick a candy kiss in the middle, pointed side down.) Bake at 350° for 15-20 minutes or until done. Dust with powdered sugar or frost with the following frosting:

1/3 c. butter, softened
2 c. powdered sugar
6 Tbsp. cocoa
3-4 Tbsp. milk
Combine all ingredients and frost cupcakes.
