Frosty Fruit Cheesecake

  • Crust:
  • 2 cups granola, any flavor
  • 2 Tbsp. brown sugar, firmly packed
  • 1/4 cup margarine
    Filling:
  • 2 (8 oz.) pkg. cream cheese, softened
  • 1 (14 oz.) can sweetened condensed milk
  • 1/8-1/3 cup lemon juice, flavor to suit taste
  • 1 tsp. vanilla
  • fresh strawberries, raspberries, kiwis, or combination of seasonal fruits

Preparation:

Crust: Heat oven to 350°. Lightly oil bottom and sides of 9" round spring-form pan. In medium bowl, combine crust ingredients; mix well. Press evenly onto bottom of pan. Bake 8-10 minutes or until golden brown. Cool completely. Filling: In large bowl, beat cream cheese until light and fluffy. Add remaining ingredients except fruit; beating until smooth. Pour over cooled crust. Freeze 5-6 hours or until firm. To serve, remove cheesecake from freezer; let stand at room temp., about 10 minutes. Decorate with fresh fruit.
