Daffodil Cake

  • 1 1/4 c. sifted cake flour
  • 1 1/2 c. plus 2 Tbsp. sugar, divided
  • 1 1/4 c. egg whites, room temperature
  • 1 tsp. salt
  • 1 1/2 tsp. cream of tartar
  • 1/2 tsp. vanilla
  • 4 egg yolks
  • 1 tsp. grated orange rind
  • 2 Tbsp. orange juice
    Frosting:
  • 1/8 tsp. salt
  • 2 Tbsp. orange rind
  • 3 c. powdered sugar
  • 1/4 c. orange juice
  • 1 1/2 tsp lemon juice
  • 1/3 c. butter

Preparation:

Sift flour and 1/2 cup sugar together. Beat egg whites till foamy. Add cream of tartar and salt, beat till stiff peaks. Beat egg yolks, orange juice and vanilla; beat into egg whites, then slowly add sugar while beating. Last fold in sifted flour and 1/2 cup sugar. Bake in a tube pan at 350° for 50 minutes or till done.
