Cowboy Caviar

  • 1 (11 oz.) can white shoepeg corn, drained
  • 1 (15 oz.) can black beans, rinsed and drained
  • 2 avocados, finely chopped
  • 1 large tomato, seeded & diced
  • 1 bunch green onions, thinly sliced
  • 1/4 c. olive oil
  • 1/4 c. red wine vinegar
  • 1 clove garlic, minced
  • 3/4 c. cilantro, chopped
  • 1/4 c. green pepper, chopped
  • 3/4 t. salt
  • 1/2 t. pepper
  • 1 t. cumin
  • tortilla chips, for serving

Preparation:

combine all ingredients. Serve at room temperature with tortilla chips.
