Chocolate Zucchini Cake

  • 1/2 cup margarine
  • 1/2 cup vegetable oil
  • 1 3/4 cups sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 1/2 cup buttermilk or sour milk
  • 4 Tbsp. cocoa
  • 1/2 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. cinnamon
  • 1/2 tsp. cloves
  • pinch of salt
  • 2 1/2 cups flour
  • 2 cups peeled zucchini, diced or finely grated
  • 1/4 cup chocolate chips
  • powdered sugar

Preparation:

Cream margarine, oil, and sugar. Add eggs, vanilla and buttermilk; beat well. Mix dry ingredients except zucchini and chocolate chips; add to creamed mixture and beat well. Stir in zucchini. Pour into greased and floured 9x13" pan. Sprinkle with chocolate chips. Bake at 325° for 40-45 minutes or until done. When it is baked and still slightly warm, sprinkle with powdered sugar.
