Cappuccino Cheesecakes

  • 1 1/4 c. chocolate wafer crumbs
  • 1/3 c. melted butter
  • 8 oz. cream cheese
  • 1 c. plain yogurt
  • 1 pkg. strong coffee
  • 2 eggs, room temperature
  • 1/2 c. sugar
  • 1 1/2 tsp. cornstarch

Preparation:

Preheat oven to 325°. Mix wafers and butter. Spoon 1 1/2 tablespoons into 12 muffin cups. Press firmly. Beat cream cheese until creamy. Add yogurt slowly. Gradually add remaining ingredients. Spoon mixture evenly into crust. Bake 20-30 minutes until set. For an elegant presentation, drizzle with melted chocolate or dust with cocoa powder. Serves 12 people.
