BBQ Jalapeno Poppers
- 18 fresh jalapenos
- 1 (8 oz.) cream cheese
- 1/2 cup cheddar cheese, grated
- 1 green onion, chopped
- 18 slices bacon, cut in halves
- barbecue sauce
Preheat oven to 275°. Cut jalapenos lengthwise. (You may want to wear rubber gloves while handling them.) Try to keep the stems intact as they look prettier. Scrape out the seeds and membranes. In a bowl, combine cream cheese, cheddar cheese, and green onion. Stuff each jalapeno half with the cheese mixture. Wrap bacon slices around each half. Brush the surface of the bacon with your favorite BBQ sauce. Secure the jalapenos with toothpicks. Grill till done or bake for 1 hour.
