Fried Ice Cream

  • 5 Tbsp. butter
  • 1 c. sugar
  • 3 c. crushed cornflakes
  • 2 qt. ice cream, softened
  • 2 c. Cool Whip
  • 1 tsp. cinnamon
  • chocolate syrup, honey or strawberries

Preparation:

Fry first 3 ingredients together in medium size frying pan, stirring constantly, for approximately 3 minutes. Pour 2/3 of this batch into 9" x 13" pan. For ice cream mixture, beat next 3 ingredients together and pour on top of crust. Sprinkle the reserved crumbs on top and freeze. Serve with chocolate syrup, honey or strawberries. Yield: 12-16 serving.
