Loaded Nachos

  • 1/4 c. taco seasoning
  • 6 Tbsp. water
  • 2 Tbsp. vegetable oil or butter
  • 1 sm. onion, finely diced
  • 1 lb. hamburger
  • 1 (13 oz.) bag tortilla chips
  • 1 (16 oz.) can refried beans
  • 1 c. canned black beans, drained and rinsed
  • 1 1/2 c. salsa
  • 1 (2.25 oz.) can sliced black olives, drained
  • 2 c. grated cheddar cheese


Preheat oven to 425°. Mix together taco seasoning and water in a small bowl. In a 10 inch frying pan, saute onion in vegetable oil or butter until tender, add hamburger and fry until browned. Drain. Add taco seasoning and cook for 5 minutes. Line the bottom of a 11"x15" roasting pan with 1/3 of the tortilla chips. Spread the chips with 1/3 of the refried beans. Spoon 1/3 of the meat on top. On top of that, sprinkle 1/3 of the black beans, salsa, olives and cheese. Repeat twice more, until everything has been used. Bake for 15-20 minutes, until the cheese is melted and the nachos are hot. Serve immediately.
